Ellis Parrinder SERVES 10-12<br /> PREPARE 25 MINUTES<br /> COOK 1 HOUR 175g unsalted butter, softened, plus extra for greasing<br /> 5 tbsp whole milk<br /> 3 tbsp instant coffee<br /> 175g light brown soft sugar<br /> 3 large eggs<br /> 175g self-raising flour<br /> 1⁄2 tsp fine salt TOPPING<br /> 100g mascarpone<br /> 60g icing sugar<br /> 100g double cream<br /> 10g dark chocolate, grated Preheat the oven to 170C/150C fan/gas 31⁄2. Grease a 900g (2lb) loaf tin with some butter then line with baking parchment. Heat the milk and coffee in a small saucepan until warm and stir to completely dissolve the coffee; leave to cool. In a large bowl, using electric beaters, cream the butter and sugar for 3-4 minutes, until pale and fluffy. Beat in the eggs one at a time, followed by the coffee mixture. Then beat in the flour and salt until you have a smooth batter. Scrape this into the tin, smooth the top and bake for 55-60 minutes or until a skewer inserted at the centre comes out clean. Cool in the tin. Using a hand whisk, whisk the mascarpone and icing sugar until combined. Add the cream and whisk until it just holds soft peaks (don’t overbeat or it may split). If you can only find the smooth variety, the ice cream will still be delicious, but you could crumble over a couple of biscuits before serving for that extra crunch. Make this alongside the Biscoff cheesecake. Danielle Wood MAKES APPROX 1 LITRE PREP 10 MINUTES 600ml double cream<br /> 397g sweetened condensed milk<br /> 1 tsp vanilla extract<br /> 200g (1/2 a jar) of crunchy caramelised biscuit spread 1. Put the double cream, condensed milk and vanilla extract in a large bowl and stir gently to just combine. Then, using an electric whisk, beat the mixture for about 5 minutes until thick. 2. Spoon dollops of the biscuit spread over, then use a palette knife to ripple it through the ice cream. 3. Transfer the mixture to a freezer-proof dish and cover with a lid or a layer of clingfilm followed by a layer of foil. Transfer to the freezer until completely set. TO SERVE FROM FROZEN Once frozen, the ice cream can be served. Why change it? Ellis Parrinder SERVES 4 1⁄2 x 500ml tub vanilla ice cream<br /> 2 firm but ripe peaches<br /> Dessert biscuits, eg viennese swirls, to serve RASPBERRY SAUCE<br /> 300g raspberries<br /> 50g icing sugar<br /> 1 scant tbsp lemon juice Place all the ingredients for the raspberry sauce in a blender and whiz to a purée. Pass through a sieve, then cover and chill until required. Remove the ice cream from the freezer 15-20 minutes before serving to soften. Bring a medium pan of water to the boil, add the peaches and cook for 1 minute, then plunge them into cold water and slip off their skins. Halve through the core, and either slip the halves off the stone then thinly slice them or, if the flesh clings to the stone, slice them on the stone then slip the segments off. Spread three quarters of the sauce over the base of four small bowls or plates, fan the peach halves out on top, pop a scoop of ice cream to the side then drizzle this with the remaining sauce. YOU Magazine Fashion Beauty Celebrity Health Life Relationships Horoscopes Food Interiors Travel Home Food <h1>Annie Bell&#8217 s nectarine and vanilla mascarpone trifle recipe</h1> By You Magazine - August 8, 2021 A delicate and light trifle with a nectarine purée in lieu of jam. Ellis Parrinder SERVES 4 4 ripe nectarines<br /> 35g icing sugar, sifted<br /> 100g mascarpone<br /> 100g 0% fat greek yogurt<br /> 1 tsp vanilla extract<br /> 2 stem ginger cookies<br /> 2 tbsp orange or other fruit liqueur<br /> 4 madeleines (Bonne Maman ones are good) Halve and pit three of the nectarines and purée in a blender with 10g icing sugar. Press through a sieve into a medium bowl. Dice the remaining nectarine and stir into the fruit purée. For the cream, mix the mascarpone, yogurt, vanilla and remaining 25g sugar in a medium bowl then set aside. Crush the biscuits in a mortar and pestle then drizzle over 1 tbsp liqueur and stir. To assemble the trifle, arrange the madeleines in the base of a small trifle bowl, drizzle over the remaining liqueur and spoon over the nectarine purée. Dollop the cream on top and thickly spread just within the rim, then scatter over the crumbs. Cover and chill for at least 3 hours. TIP It will keep well for a couple of days in the fridge. YOU Magazine Fashion Beauty Celebrity Health Life Relationships Horoscopes Food Interiors Travel Home Food <h1>Tomato wasabi and nori salad recipe</h1> By You Magazine - August 1, 2021 Tomatoes, soy sauce and nori are umami-rich flavours that truly complement each other, while the wasabi adds a nice undercurrent of heat. Nassima Rothacker SERVES 4 500g tomatoes (a mixture of colours and sizes)<br /> 1 1⁄2 tbsp sherry vinegar<br /> 1 tbsp soy sauce or tamari<br /> 1 tsp groundnut or sunflower oil<br /> 1 tsp runny honey<br /> 1 tsp wasabi paste<br /> 1⁄2 sheet nori<br /> Handful of micro coriander or chopped coriander leaves Make sure your tomatoes are at room temperature. Cut them into 1cm-thick slices, removing any sections of thick core, and arrange over a serving plate. Whisk together the vinegar, soy sauce, oil, honey and wasabi in a bowl. Taste and add more wasabi, if you like. Spoon the dressing over the sliced tomatoes. They can sit like this for a few minutes, but wait until you’re ready to serve before sprinkling over the nori as it softens quickly. Cut the nori into two long strips about 2.5cm wide. Place the strips on top of each other and, using clean kitchen scissors, snip shards of nori over the tomatoes. With sumac for seasoning and wedges of roasted carrot and beetroot, it&#8217;s an easy one-pot feast that the whole family will enjoy. Chris Alack SERVES 4 1 x 1.8kg good quality free-range chicken<br /> sea salt and black pepper<br /> sumac for dusting<br /> extra virgin olive oil<br /> 400g carrots, scrubbed and left whole if small or sliced if large<br /> 400g beetroot, scrubbed and cut into wedges<br /> sprigs of oregano 1. Preheat the oven to 210C/190Cfan/gas 6. with a large roasting pan (about 34cm x 27cm), or equivalent deep ovenproof frying pan, inside. Season the chicken and dust it with sumac. Loosely tie the legs with string, leaving some air between legs and breast. Toss the vegetables with 2 tablespoons of olive oil and some seasoning. 2. Place the chicken in the centre of the hot pan, tucking in the wings. Drizzle over a little oil and scatter the veg around the edge. Tuck in a few sprigs of oregano. Roast for 1 hour, stirring the vegetables halfway through. 3. Remove the chicken to a warm plate. Pour off the juices in the pan and reserve, skimming off any fat. With a spatula, spread out the veg in the pan and return to the oven for 10 minutes or until golden, while the bird is resting. Serve the chicken with the vegetables and the warmed pan juices. Annie Bell&#8217;s ultimate crispy roasties recipe uses three simple ingredients to create Sunday roast magic. You can pick and choose when it comes to fat &#8211; extra virgin olive oil, melted goose fat or clarified unsalted butter all work beautifully and bring their own unique flavour. Chris Alack SERVES 4 sea salt flakes<br /> 900g floury maincrop potatoes such as maris piper<br /> about 3 tbsp extra virgin olive oil (or use 3 tbsp melted goose fat or 4 tbsp clarified unsalted butter) 1. Bring a large pan of salted water to the boil and preheat the oven to 210C/190Cfan/gas 6. Peel the potatoes and cut into rough 4.5cm chunks. Add to the pan and cook for 8 minutes. Drain using a colander and leave for 2 minutes to steam-dry. 2. Return the potatoes to the pan and shake them around, roughly tossing until they appear textured and floury on the surface. This is the secret to a crispy shell. 3. Tip the potatoes into a large roasting pan and trickle over the oil (or goose fat or butter). Roast for 1 hour, turning and basting twice (more frequently if using butter) until evenly gold and crisped all over. The top shelf of the oven works best. Otherwise, or if roasting with a joint, they may need a little longer. Finish with a few salt flakes if wished. Recipe by Annie Bell. Food Styling by Clare Lewis. There’s something to tick every box in this recipe: sweet, melt-in-the mouth potato, salty cheese, tangy pomegranate molasses, crunchy pistachios and juicy pomegranate seeds – oh, and not to mention the slightly smoky, crunchy potato skin that really should not be left behind on the plate. Every time I look at this picture I just want to eat it there and then. Susan Low SERVES 2 2 medium sweet potatoes, scrubbed<br /> 1 tbsp sunflower oil<br /> ½ tsp smoked or sweet paprika<br /> 1 tsp flaked sea salt<br /> 50g pistachios<br /> 2 tbsp pomegranate seeds<br /> 4 spring onions, finely sliced<br /> 100g feta cheese, crumbled<br /> extra virgin olive oil<br /> 1 tbsp pomegranate molasses<br /> few mint leaves Preheat the oven to 200°C/400°F/gas 6. 2. Prick the sweet potatoes all over with a fork. Put into a bowl along with the oil, paprika and salt. Rub or toss to coat the potatoes in the spicy oil. Put the potatoes in the oven and bake for 45–55 minutes, or until tender and the skin is crisp. 3. To serve, cut open the sweet potatoes and scatter each half with the pistachios, pomegranate seeds, spring onions and crumbled feta. Drizzle with extra virgin olive oil and some pomegranate molasses. Finish with some mint and enjoy while the potatoes are still hot.
